Chef Sarfaraz Ahmed’s masterful cooking unfolds in a casual yet dazzling mix of flavours. Imagine culinary staging with a delicious global twist at the Mumbai edition of the Michelin-starred Carnival by Tresind in Dubai.

Eat: The chaat sundae is a tribute to one of India’s most popular street foods. A pretty dish with spinach papdi, dahi bhalla, yogurt ice cream and chutneys for the khatta meetha variation in a ruby ​​granita with pomegranate pearls.

Pil Pil Pollichathu will delight seafood lovers with grilled sea bass perfectly smeared with Malabari masala; as will the delicious Carta Farta – Malabar fish curry served with Khasta Malabar Paratha. The Lobster Pao – Carnival’s quirky homage to the ubiquitous Mumbai street snack – is a delicious version served Japanese-style in a bento box format.

The fresh pao is prepared live at your table, smeared with yuzu kosho and finished with the fat lobster vada, rounded off with the togarashi drop for a tangy, lemony finish. While the cocktail program is a wild roulette of exciting flavor twists, it’s the decidedly different tiramisu that wins the competition.

decor: There’s never a dull moment at Carnival. Stunning masks on the walls and on the faces of the waiters and bartenders add a touch of whimsy. The wandering mentalist will capture your attention with fascinating card tricks at the table. Bright blues, reds and golds fill the spacious restaurant and rose gold trees mark the waiting area at the well-stocked bar.
