FOOD this week: Garlic Ribeye Tacos from Shadyside Lounge

Deciding where and what to eat in and around the pool each week can be a challenge—there are so many great options. In this post, we’ll dive into dishes that are sure to satisfy your hunger and leave you wondering where to go next.

If there was such a thing as a desert island taco, this week’s feature would probably be mine. I’d probably have to think about it a bit more (and more seriously), but having that taco available whenever I want it sounds pretty awesome right now.

I think for me it all comes down to the meat. Ribeye is a very flavorful cut of beef on its own, but when marinated in plenty of fresh garlic and onion, it soaks up the flavor like a sponge and the result is insanely flavorful meat that is as tender as a baby’s touch.



Served in a flour tortilla, the protein gets an even stronger flavor with the addition of spicy pickled onions, queso fresco, avocado cream, and fresh cilantro. There’s a smoky note with a hint of heat at the end of each bite, but it’s balanced out by the crema, which adds a nice layer of creaminess. If you thought that was enough to satisfy your palate, you can also enjoy the queso fresco with salty and spicy notes to take it to the next level.

From the butteriness of the steak to the crisp crunch of the onions, it also offers just the right amount of textures to focus your palate.
