A conversation with Gurney’s head chef Mbaba Danso

What is your favorite summer ingredient?

My favorite ingredient is lobster, a classic Montauk ingredient, and we are excited to present the Truffle Lobster Roll, served at the Beach Club.

How did you get into this profession?

A friend introduced me and I never looked back. My time at Gurney’s was an exciting and educational part of my career.

What is the story behind your dish/drink?

At Scarpetta Beach we serve the Short Rib and Bone Marrow Agnolotti, a guest favorite! At the Beach Club we present the Truffle Lobster Roll – one of our most ordered dishes – served on a toasted brioche with black truffle and a Meyer lemon emulsion. And from Tillies we serve our Wasabi Crusted Tuna.

Why is it a perfect fit for the White Party?

Lobsters are a must in summer.

Can you describe any unique or standout elements your company will showcase at the event?

We are proud to showcase our local favorites, our special flavors and of course, our hospitality as we invite guests to the White Party to celebrate summer with us here at Gurney’s Montauk.

Where do you get your inspiration from?

My past and the people around me.

I am proud to say that our dishes are seasonal, light, fresh and taste amazing. Our service is characterized by love and respect for our guests and the food we serve.

What are you most looking forward to at the event?*

We want to introduce our food to people who have been here before and also welcome guests who have never been to Gurney’s before to give them a little taste of what Montauk is all about.
