The study, led by Neda Akhavan, an assistant professor at the University of Nevada, Las Vegas (UNLV), refuted the common notion that potatoes are unhealthy. The study was conducted on participants who consumed a serving of potatoes daily – they showed a decrease in fasting blood sugar levels, improved body composition, smaller waist circumference and a reduction in resting heart rate.
