Need new ways to eat cucumbers? This TikToker has more than a few ideas

If you love pickles and don’t know Logan Moffit, the “pickle guy” on TikTok, let us introduce you to him. Almost every day of the week, he prepares pickle recipes in a shakeable container and always comes up with more creative options.

But why cucumbers, when they are found all over the world? “Cucumbers are my favorite vegetable!” Moffitt tells Real Simple. “They are addictive and go with so many flavors.”

During his time on TikTok, Moffitt has also tried out some pretty wild cucumber recipes, but he told us one in particular stood out. “I was most surprised that the cucumber salad with peanut butter and garlic was actually that good,” he said. “I was worried that peanut butter and cucumber wouldn’t go well together, but cucumber just tastes good on everything.”

Looking to upgrade your traditional pickle recipes? Here’s Moffitt’s favorite recipe so far, plus four of our own favorites.

Salmon-cream cheese-bagel-cucumber salad

Moffitt told us that his absolute favorite cucumber recipe is the bagel salad with lox, cream cheese, and everything. “It tastes just like a Novacado bagel, but with cucumber,” he says.

Here, he slices cucumber and red onion, then adds chopped smoked salmon, whipped chive cream cheese, capers, avocado, salt, pepper, MSG, and bagel seasoning. Shake this recipe in a container and be prepared to understand why it’s Moffitt’s favorite. But he’s not the only one who loves it—he says this recipe “seems to be everyone’s favorite,” “probably because it’s the tastiest.”

Sweet and spicy

Anyone looking for a way to add some spice to their pickles will surely enjoy this recipe. Slice a whole cucumber, then add Sichuan chili flakes (Moffitt isn’t kidding and adds a fair amount) as well as honey to add some sweetness to the dish. Before you shake it up, also add soy sauce, sesame oil, brown rice vinegar, chopped white onion, MSG, and sesame seeds. Moffitt says this recipe looks nice and spicy and is “seriously that good.”

A cucumber recipe for on the go that you can make (literally) anywhere

The kitchen isn’t the only place you can make a cool cucumber salad. Moffitt says he was at his grandparents’ house when he decided to take his classic OG recipe to the water, slicing the cucumber and adding all the ingredients to the plastic container before enjoying it. “Going into the lake sounded weird to me and I was shocked that so many other people felt the same way,” he said. “When I saw the finished video, I didn’t expect it to be so well-received, but I’m glad I was able to do some people a favor by treading water.”

To make Moffitt’s original cucumber salad, or what he calls “the perfect recipe,” simply slice the cucumber and place it in a container. Then add soy sauce, fish sauce, MSG, rice vinegar, a grated garlic clove, sugar, a little chili oil, green onions and sesame seeds. Shake well and voilà! Moffitt admits that even though he makes this recipe all the time, he always forgets how good it is.

Greek yogurt, feta and lemon cucumber salad

For this refreshing, Greek-inspired take on cucumber salad, Moffit adds several spoonfuls of Greek yogurt, grated feta cheese, MSG, a grated garlic clove, some freshly chopped mint, and lemon juice.

Replace cucumber with raw onion

Even if pickles aren’t your thing, Moffitt’s extensive collection of recipes includes grab-and-go options. This one, for example, calls for a whole red onion instead of a cucumber, which he says is “exclusive for raw onion lovers.” First, he slices the onion, then adds red pepper paste, Kewpie mayonnaise, soy sauce, MSG, sesame oil, green chili flakes, and sesame seeds. Moffitt warns that this recipe “burns your nose so good,” but is incredibly delicious.
