Meet Hamptons Catered Affairs Executive Chef Dana McCall

What is your favorite summer ingredient and will you incorporate it into your event offering?

Long Island sweet corn. Yes, it will be in our dish.

How did you get into this profession?

I have been cooking and entertaining since I was a child, and making sure the food stands out in taste and presentation has always been my top priority, whether it was a large event or just a Sunday dinner at my home.

What is the story behind your dish/drink that makes it perfect for a white party?

My favorite summer group meal is a big pot of clams and mussels, and I just add other delicious ingredients to take it to the next level. Nothing is better than enjoying great seafood while enjoying the water view in Montauk.

Can you describe any unique or standout elements you will showcase at the event?

Everything is prepared on site and brought straight to your table. As an off-premises catering company, we specialize in delivering the food to you.

Where do you get your inspiration from?

The end result always inspires me. Nothing makes me happier than seeing the client and their guests delighted and excited by the food and the experience. That’s what makes every event worthwhile. Whether it’s 10 people at an intimate dinner party or an event for 500, I always want to make sure everyone remembers the meal as one of the best experiences they’ve ever had.

What are you most looking forward to at the event?

I am always happy to meet new faces and see all our old and new friends from past events!

If your favourite cocktail or dish was named after a famous East End location, which would it be and why?

The Montauk Lighthouse. It is an iconic landmark that represents the history of Long Island. It is a link to tradition and local culture and, most importantly, it is visually stunning. Our dish evokes the same feelings as the traditions of Long Island summer clam dinners, local seafood and is visually appealing.

If your company was a signature cocktail or signature dish, what would it be called and what would the drink/dish be?

The Hamptons Custom. It reflects the essence of our company, which specializes in creating customized menus designed specifically for the client.
